The youngest Glam Teen has just gone off to uni, I know it’s hard to be fending for yourself for the first time and some reminders of home are a comfort.  Not necessarily the ‘good for you things’, but the things that are familiar and fun.

Friends were going to see him today so, I sent up some reminders: a photo of the Glam Pooch for his notice board, a new outfit for all those social events and food.  Gourmet sausages, some home made chilli con carne, enough to share.  And a slab of Mars Bar Blondies, crispy on the outside, gooey with caramel and chocolate on the inside.

Mars Bar Blondies

Cut into bars or squares

  • 150g good quality white chocolate
  • 140g unsalted butter
  • 400g light brown muscovado sugar (Dark brown is fine but gives a more treacle flavour)
  • 1 teaspoon real vanilla essence or vanilla paste
  • 3 large eggs beaten
  • 300g plain flour
  • 1 teaspoon baking powder
  • a pinch of salt
  • 10 small Mars bars

Method

  • Grease a brownie tin and line with baking paper/parchment
  • Heat the oven to 160c / 325f
  • Melt the white chocolate over a double boiler, make sure the water does not touch the bottom of the bowl with the chocolate, as white chocolate freezes very easily
  • Melt the butter in a large heavy bottomed saucepan, then add the sugar and mix together
  • Remove from the heat.  Leave to cool for about 1 minute, add the white chocolate, beaten eggs and vanilla essence.  Stir well to combine the ingredients. Do not beat.
  • Sift the flour, baking powder and salt into the chocolate and egg mixture.  Just stir to combine, but do not beat
  • Pour half the mixture into the tin and ease it into the corners
  • Place a layer of Mars Bars over the top of the layer of batter

  • Pour the remaining mixture over the Mars Bars, you may have to use a palette knife to help spread the  mixture to ensure the Mars Bars are covered
  • Bake in the preheated oven for about 45 minutes or until the mix looks like it is just browning at the edges but is still soft and gooey in the middle
  • Remove from the oven and cool completely in the tin
  • Remove from the tin using the excess baking parchment to help lift it, remove the paper and cut into bars or squares.  Store in an air tight tin

    Whoah, those look amazing!!!! I wish my mom made me stuff like that, but the closest thing to any home made treats I got came out of a BettyCrocker box!

      Compared to a lot of the boxed stuff when I went to uni Betty Crocker is paradise. All that frosting, I’d never seen such decadence! GG

    These do look very good. I love how that dark sugar gives a treacle flavour – I like that flavour in a blondie. I hope your son’s start to uni life went well xx

    Wow! Youngest Glam is off to uni too. Which uni did he pick? You are wonderful to have sent such a great care package. These look so good, GG. I love Mars bars but we don’t get them here 🙁 My stash comes from my nephews in Canada who always bring me a years supply! I have some left that need to be used up and I wanted to bake them up. Thank you for this!! I will definitely make these, live how gooey they are.

      It’s so strange to think of him off at uni. He chose Birmingham and seems to be enjoying it, making new friends. I did wonder if Mars were available universally but any caramel bar would work. I’d love to see a pic if you make them. GG xxx
