Bananas were a special treat when I was little and often had to be shared with my older sister. We were lucky if we had one a month, but how I looked forward to the sweet sticky taste of them. Mashed with milk, sloppy and delicious. Baked in their skins in the oven until, bursting with abundant flavour, they split. We’d carefully remove the hot skins, eating the bananas with ice cream, which instantly melted against the sweet heat. Or simply peeled and, of course cut in half to share. Since then I always have Fairtrade bananas as part of my shopping list, not just a once a month treat but a family staple.

Recipe
Fairtrade-Banana And White Chocolate Brownies
Makes 12 squares
- 100g Fairtrade white chocolate
- 140g unsalted butter
- 400g light brown sugar
- 1 teaspoon vanilla paste
- 3 large eggs beaten
- 4 Sainsburys Fairtrade bananas
- 300g plain flour
- a pinch of salt
- 1 teaspoon baking powder
Method
- Preheat Oven to 180c or 160c fan assisted
- Grease, and line a shallow brownie or baking tin (34cm x 20cm x 3cm or 13 1/2″ x 8″ x 1″)
- Chop the white chocolate and place in a microwaveable bowl, microwave in 30 second bursts stirring in between each burst, until completely melted
- Meanwhile melt the butter in a medium sized saucepan, once melted stir in the sugar and leave to cool for a couple of minutes
- Once slightly cooled add the eggs and melted chocolate and stir to combine
- Stir in the chocolate
- Peel the 3 of the bananas and cut in half lengthways and in half again through the centre. (12 pieces) set aside
- Combine the flour, salt and baking powder and stir into the sugar and chocolate mixture. Do not over mix, just stir until all the flour is combined into the chocolate mixture
- Pour half the mixture into the tin, lay the cut bananas across the mixture in rows
- Top with the remaining mixture
- Peel the remaining banana and slice in slightly slanted slices, top the mixture with the slices
- Place into the oven and bake for 60 minutes until golden brown, very slightly risen and still gooey on the inside
- Remove from the oven and leave to cool completely in the tin before cutting and removing

It’s funny, I love bananas, but hardly bake with them, I’m not a fan of cooked banana taste, unless they’re sautéed with brown sugar inside a crepe with ice cream 😉 I also have a child who hates bananas so I can never make anything with them in it. I may be able to convince her with these wonderful brownies though, I love how the bananas look embedded in the batter, so pretty!

I’ve made banana blondies before and thoroughly enjoyed them, but I mashed mine in. I’m now quite excited to try your method, which must give a completely different texture.
I thought about mashing mine in but thought it might be too runny in an already gooey mix. I really like the chunks of banana you get doing it this way. GG

Oh how very delicious, GG! We had a banana drought here for a while, as a cyclone wiped out much of the banana crops up north and the cost of a single banana was prohibitive. Since then, I don’t eat as many as I used to, even though the price has stabilised. The first one I did enjoy was quite awesome… the aroma and flavour almost blew me away!

Bananas have always been so common here that we tend to take them for granted. But a few years ago there was a cyclone and the banana farms lost every banana. Banana prices sky-rocketed and they instantly became a luxury item and something you sure did eat less frequently. Alfie was two and I used to buy them for him as a very special treat. No worries about fairtrade bananas up here as we buy them from local farmers. I had a banana tree in my garden but it shed into my neighbour’s pool so we took it down.
White chocolate can be tricky to know where it’s sourced. I love the brownies!

We get tonnes of bananas all year round here although I doubt they are fair-trade. I can’t imagine anything is…. These look like a good excuse to use up the bananas in the fruit bowl.

this looks great. I remember having sliced bananas with milk as a dessert as a child – I just loved it. We take bananas for granted here but a few years back after the cyclones in Queensland the prices got ridiculous and we only bought them for the babies. Fortunately they are cheap again – I love them sautéed in butter and honey and served with ice-cream! But I love the way you can still see the bananas in these brownies.
