Sweet and spicy simple curry recipe with fresh spinach and hard boiled eggs.

Ingredients
  • 3 tbsp Groundnut oil
  • 1 Dried chilli
  • 2 Sticks of cinnamon
  • 6 Cardamom pods
  • 5 cloves
  • 1 tsp Black peppercorns
  • 1 Onion finely chopped
  • 2 gloves garlic, finely chopped
  • 1 400g Can tomatoes
  • 1 tsp Ground coriander
  • ½ tsp Ground cumin
  • 1 tsp Ground turmeric
  • 1 Fresh chilli finely chopped
  • 2 tsp Sugar
  • 1 tsp Tamarind paste
  • 4 Hard boiled eggs, shells peeled
  • 5-6 Sprigs of fresh coriander, finely chopped
Method
  1. Heat oil over a moderate temperature in a large pan or frying pan, add the whole spices, dried chilli, cinnamon, cardamom, cloves and peppercorns. Cook until the spices start to pop and then add the onions.
  2. Stir until they stop spitting and then spread into an even layer and leave to cook until translucent, add the garlic and stir well. Cook for a further 5 mins. Add the tomatoes and leave to cook for 5 mins. If the sauce gets too dry add a little water.
  3. Meanwhile, make a paste of the ground spices with a little water and add to the pan. Stir well and cook out the spices for 5 mins.
  4. Add the chilli, sugar and tamarind paste and cook for a further 5 minutes. Add the eggs and serve topped with chopped coriander.
