A sweet almond Friand stuffed with tart new season rhubarb and topped with almond crumble

Ingredients
  • For The Rhubarb
  • 300g Rhubarb cut into equal lengths
  • 1 tsp Vanilla paste
  • 30 mls Water
  • 60g Caster sugar
  • For The Crumble Topping
  • 40g Flaked almond roughly chopped
  • 40g Plain flour
  • 40g Light Muscovado sugar
  • 30g Unsalted butter, melted
  • For The Friands
  • 75g Plain flour
  • 250g Icing sugar
  • 125g Ground almonds
  • 6 Egg whites
  • 2 tbsp Rhubarb juice (from cooking the rhubarb)
  • 1 tsp Vanilla paste
  • 175g Melted butter
Method
  1. For The Rhubarb
  2. Preheat the oven to 180c, 160c fan, gas mark 4, 350f. Grease a 12 hole muffin tin.
  3. Place the rhubarb, in a single layer on a flat roasting tin.
  4. Mix the Vanilla paste and water, pour over the rhubarb, then sprinkle with the sugar.
  5. Place in the oven and roast for 10 mins
  6. Remove from the oven and leave to go cold, reserve the juice from the cooking.
  7. Meanwhile prepare the crumble topping, Put all the topping ingredients in a bowl and rub together to form a sandy mixture, set aside in the fridge.
  8. To Make The Friands
  9. Turn the oven up to 200c, 180, fan, gas mark 6, 400f.
  10. Put remaining flour, icing sugar and ground almonds into a bowl, sieving in the icing sugar.
  11. Whisk the eggs until frothy,
  12. Add the eggs, rhubarb juice from cooking the rhubarb and vanilla paste and stir together.
  13. Pour in the butter slowly stirring, then beat together.
  14. Put 1 tbs into each hole of the prepared muffin tin, place rhubarb equally into each cup and then top with the remaining batter, and sprinkle the crumble topping over each one.
  15. Place in the oven for 20 mins until golden brown at the edges.
  16. Remove from the oven and leave to cool in the tin for 5 mins then carefully remove and leave to cool on a cooling rack.
Notes
The rhubarb can be prepared in advance, even the day before.
