Dish And Jar Of Smoked Chipotle Chilli Onion Marmalade

Pickles and chutneys are always a popular gift at this time of year.  If you’re thinking of giving a cheese board as a gift, how about adding some homemade goodies?  Oatcakes, crisp biscuits or smoky, spicy sweet onion marmalade.  It only take a little patience to sweat down the onions and the result is magical.  It makes a bought gift very personal and thoughtful.

Jar Of Smoked Chipotle Chilli Onion Marmalade

Smoked Chipotle Onion Marmalade

Makes 660g of marmalade (Just under 1and 1/2lb)

  • 30g unsalted butter
  • 1 tablespoon light olive oil
  • 900g red onions thinly sliced
  • 200mls sherry vinegar
  • 3 smoked chipotle chillies (add more to taste)
  • 50g redcurrant jelly
  • 150g light Muscovado sugar

Method

  • Melt the butter in a large frying pan with the oil over a medium heat
  • Add the onions and stir to coat with the oil and butter
  • Leave to sweat for about 10 minutes stirring occasionally, do not allow to colour
  • Stir thoroughly and cover the pan with a lid or foil and cook over a low heat for a further 20 minutes
  • Meanwhile soak the chillies in warm water
  • Remove the cover and add the vinegar and stir in the redcurrant jelly
  • Remove the chillies from the water and slice thinly
  • Add the sugar and the chillies, stir well, Cook until the sugar has melted and the mixture is syrupy, about 15- 20 minutes.  Stirring occasionally to stop the mixture catching.
  • Remove from the heat and spoon into sterilised jars, Seal once the marmalade has cooled completely

      I love onion marmalade too, this is just a little different with a wonderful smoky flavour. The labels are just luggage labels from the stationers. GG x

    I am a lover of smoky chipotle but more so is my OH. Seriously smoky chilli is poured over everything by him. This is one I would make for him. Would crab apple jelly work too?
