- Amaretti Biscuits in their brightly coloured tins make a wonderful Christmas present, but how much better if you can make them yourself. Crisp on the outside and soft in the centre, particularly delicious with the addition of good quality cocoa. Perfect in a small box as a dinner gift or an abundant pile, wrapped in tissue as a special surprise.
Amaretti Biscuits
Makes 40 biscuits
- 2 tablespoons Amaretto
- 1 egg white
- 185g (6 1/2 oz) ground almonds
- 250g (9oz) caster sugar
- Icing sugar to dredge
For the chocolate Amaretti Biscuits
- All ingredients are the same but use 170g (6oz) ground almonds and 2 tablespoons cocoa powder mixed together, proceed as for the plain Amaretti
Method
- Preheat the oven to 18oc / 350f and line a baking sheet with parchment or baking paper
- Whisk the Amaretto and the egg whites together until the mixture is just foaming on the surface
- Mix the almonds and sugar together in a bowl and make a well in the centre
- Pour the egg white mixture into the well and mix together until it forms a ball
- Turn onto a work top sprinkled with icing sugar and knead until the dough forms a firm ball
- Divide into 40 equal sized pieces and roll into balls, roll the balls in icing sugar and place on the baking sheet
- Bake for 10 to 15 minutes until golden brown, the biscuits will crack across the surface
- As soon as you remove the biscuits from the oven sprinkle with icing sugar and leave to cool on a cooling rack
- Wrap in squares of tissue paper
